A quick crockpot meal using our CSA produce. It’s been a rough week but I managed to throw this in the crockpot in a few minutes before running off to work. It was pretty yummy. It might be good with a bit of apple sausage in it. I served it over some kasha. The vertict: Yummy! Nobody else ate it though, so it’s kind of an n of 1. (Mr. DIYlettante worked late and ordered pizza, and little miss just wasn’t into eating tonight).
1 butternut squash, peeled and cubed
2 apples, peeled, cored, and cubed
1 shallot, chopped
1tsp curry spice
1 c broth (chicken or veggie)
1 can of white beans
Instructions: Put all ingredients in slow cooker and cook on low for 4-6 hours.
